{TWD} Real Butterscotch Pudding

You know that friend that came over the other day? Well, he has this thing for butterscotch. So I found the timing for this pudding quite intriguing. It was a perfect day to make Real Butterscotch Pudding.

Whenever I have thought of butterscotch, I think what came to mind were butterscotch chips and pudding cups with caramel colored cream inside. Never had I ever considered that butterscotch actually meant butter and scotch...and brown sugar. This was my chance to taste *real* butterscotch and I was excited!

But...the recipe...it was...involved...to say the least. Food processor? Since when does pudding require a food processor. I know, if I had one and actually used it for this recipe, I may never go back. I do have a blender, but sometimes I just have to draw my limits. On this particular day when my kitchen was already being stocked with a lunch feast, I couldn't fathom bringing the blender out...or worse...cleaning it.

I was not going to let the "required" food processor stop me in any way, so I pressed forward. The taste of the pudding was incredible - I loved it! I think I took it off the heat too soon and although it seemed to be on its way to firm when I placed it in the fridge, it did no such thing during the four hour rest I gave it.

Butterscotch soup it was! Again, not letting anything stop my butterscotch tasting experience, I served the bowls of butterscotch soup with banana cakes (I set out to make these as written when I found I had *no more* butterscotch chips...so these turned out as chocolate vanilla banana swirl cakes). We devoured them, it was all delicious! My friends felt like the scotch was rather prevalent, I felt otherwise. I am just glad it didn't taste like butter though.

I liked butterscotch so much, I used the flavor ideas to create something else...coming soon!

Glad you liked the pudding. It was rather decadent wasn't it? I didn't make it in the food processor either. Too many horror stories! Gorgeous photos as always!

Wow! The recipes look great, but I'm even more impressed by how you always make them look so beautiful. :) Ironically, I will have to try some after Christmas, when I actually have time to cook!

I don't have a food processor either so I just used the wire whisk. Nothing wrong with good ole handy work!

I love butterscotch pudding but it's not something that I find served in most restaurants. But honestly "butterscotch soup with banana cakes"?? Sounds even better! YUM!

This looks delicious. And I have to laugh...I just finished making the Butterscotch Tartlets from the "Baked" cookbook - my first time making butterscotch too -- and I have a feeling it's not going to harden properly either. The recipe said the 'scotch should be very thick when removed from heat, but mine did not thicken up even though I left it on for about two minutes longer than suggested. Just put in the fridge for the firm-up so we'll see. Thanks for giving me a good idea for "soup" though in case I find the same! :)
