I admit that when I saw we were to make Arborio Rice Pudding this week, I did not have high hopes. You see, I have already found my perfect Rice Pudding recipe and it is one I make over and over. I couldn't imagine anything reaching the same status in my mind.
What was worse is that most TWD bakers were having trouble with it turning out like soup, or burnt. Believe me, that made for very little motivation to recreate this particular recipe. But for fun, I did. I decided at the end to make it chocolate so that I couldn't compare it to my favorite.
Truthfully, I enjoyed it. It tasted good, creamy and just slightly chocolate-y. The rice seems to have more consistency in this recipe, which I neither liked or disliked. I have a feeling I will make this particular recipe again. Because of that, and the fact that I changed several amounts, I am going to write it out here.
But, don't worry, my favorite is still my favorite!
Chocolate Arborio Rice Pudding
Adapted from Baking From My Home to Yours
Serves 2
scant 1/4 cup of Arborio Rice
2 cups of water
2 1/4 cups of whole milk
2 tablespoons of sugar
scant 1/4 cup of chocolate chips
1. Combine rice and water in a heavy saucepan. Bring to a boil. Lower heat and boil for 10 minutes. Drain, rinse and set aside.
2. Combine milk and sugar in the same saucepan, bring to a boil over medium high heat. Add rice, lower heat and gently simmer for about 45 minutes or until the mixture thickens. (I always run my finger on the back of the spoon, if it leaves a track, it is done.)
3. Add chocolate chips and stir to melt into the mixture. Cool slightly, cover with plastic and cool completely in the refrigerator.

YES! The best rice pudding is indeed made with sweetened condensed milk.
