WARNING!!!

This recipe should come with a warning. It should warn you that you must give all of the cakes, except one, away before taking the first bite. It should warn you that after the first bite, you won't be able to stop yourself from eating more. It should warn you that you will become obsessed thinking about other fillings and other flavors...for next time. It should warn you that it is so simple you *will* want to make it over and over. It should warn you that it is sturdy enough to pick up and eat out of your hand and gooey enough to lick from your fingers when you're done.

Since the cookbook doesn't come with that warning, I felt like it was my responsibility to warn you. Don't under any circumstance or for any reason make these cakes.

Don't even wonder if they might taste good.

Don't even think about them.

Just don't.

Gooey Chocolate Cakes
Adapted from Baking: From My Home to Yours
by Dorie Greenspan

Makes 6

1/3 cup of flour
3 tablespoons of unsweetened cocoa powder
1/4 teaspoon of salt
150 grams of bittersweet chocolate con cafe (125 grams coarsely chopped & 25 grams very finely chopped)
100 grams of butter, cut into 8 pieces
1 teaspoon of instant coffee powder
2 large eggs, at room temperature
1 large egg yolk, at room temperature
1/3 cup of sugar

1. Preheat the oven to 400F. Coat a regular-size muffin pan with baking spray and place on a baking sheet.

2. Sift the flour, cocoa and salt together.

3. In a double boiler, heat the coarsely chopped chocolate, butter and instant coffee powder, stirring occasionally just until they are melted. Remove from the heat.

4. In a large bowl, whisk the eggs and yolk together, then add the sugar and whisk until well blended, about 2 minutes. Stir in the dry ingredients. Stir in the melted chocolate mixture slowly. Divide the batter evenly among the muffin cups and sprinkle the finely chopped chocolate over the batter.

5. Bake the cakes at 400F for 13 minutes. Transfer them to a rack to cool for 3 minutes. (There is no way to test that these cakes are properly baked, because the inside remains liquid.)

6. Place wax paper over the muffin cups & place a cutting board over the wax paper. Flip the muffin cups over onto the wax paper to unmold the cakes. Use a wide metal spatula to lift the cakes onto dessert plates.

LOL! I wish I'd read this post before joining TWD, I'm afraid all of Dorie's recipes should come with a warning! These were incredible, and I imagine even better with a little kick of coffee in them!

Ha! Thanks for the warnings! Wish I'd had a couple of them before I started my adventure with these lovelies.

Is that some sort of pistachio center I spy in one of your cakes? Or mint? Or what? Inquiring minds may be sorry they asked, but they want to know. :)

Well, I'm finally at the Cs (I skip around the list.) Your warning is right on target, too! I will have to chastise my neighbor when she returns, especially since she loves chocolate. I do, too, but I don't need them ALL to myself! Yours look really delicious!
