I can totally admit that I love dessert for breakfast. I love a slice of pumpkin pie early on a fall morning. I cannot pass up a chance to eat cheesecake with my coffee. Fruit crisps in the wee hours of the morning? Of course!
One thing that seems to call out to me all through the day are cookies. But I feel a bit guiltier eating them for breakfast. Unlike the pie, cheesecake and crisps, I know that cookies are just plain not the breakfast of champions. Until now!
This is your chance to enjoy cookies right out of bed - guilt free!
Breakfast Cookies
Adapted from Cooking Light
Makes 10
3/4 cup of packed brown sugar
1/4 cup of butter, melted
2 large eggs
1 teaspoon of vanilla extract
1 cup of flour
1/2 cup of whole wheat flour
1/2 cup of wheat bran
1/2 teaspoon of baking soda
1/4 teaspoon of ground cinnamon
1/4 teaspoon ground cloves
1/4 cup of finely chopped dried figs
1/4 cup of sweetened dried cranberries
1/4 cup of chopped pecans
2 teaspoons of granulated sugar
1. Preheat oven to 350F.
2. Combine brown sugar, butter, eggs and vanilla in a large bowl.
3. In a large bowl, combine flour, wheat flour, bran, baking soda, cinnamon, and cloves, stirring with a whisk. Stir in chopped figs, cranberries and pecans. Add flour mixture to egg mixture, stirring just until moist.
4. Drop by level 1/4 cup measures 4 inches apart on 2 baking sheets lined with parchment paper. Sprinkle evenly with granulated sugar. Bake at 350F for 12 minutes or until almost set. Cool 2 minutes on pans. Remove from pans; cool completely on wire racks.

I need to make these for my kids, they are always asking for cookies, and these look as healthy as a cookie can be.
Although I wouldn't complain about having a cookie for breakfast, this one is totally justifiable!! Sounds delicious!

I have a recipe for breakfast cookies that I've been meaning to get to but am sort of scared to try. They're from Ellie Krieger and they call for one small jar of carrot baby food! Sounds crazy but they looked good on the show. Yours look even better and--bonus--no baby food!
You had me with the title "breakfast cookies." Now that I see they have figs in them, I'm giddy with delight. I have got to try these.
Cookies for breakfast is a great idea. I only do it very rarely. :) These cookies sound really good. I like the dates in them. I have been wanting to try baking with dates more often.
My kids would love it if I offered them one of these yummy cookies in the morning! Seems like the perfect thing to have on hand when we all sleep a bit too long.

I love a cookie for breakfast too:) I am not a big breakfast person, and I sometimes just skip it, i know it's not a good idea:) But I love cookies for breakfast, with a cup of hot tea. That is usually enough for me. Love your recipe!
