Happy Easter!

Easter is a very special day. For Christians, it is a celebration of the resurrection of Jesus Christ from the dead. Christians believe that, through his resurrection, Jesus defeated death and sin and offers people the promise of eternal life if they follow his teachings. Eggs have been a symbol of new life and resurrection and they continue to be an Easter symbol even today.

Happy Easter, from Peru to you!

Sugar Cookies
Adapted from Better Homes & Gardens
Makes about 36 cookies


2/3 cup of butter, softened
3/4 cup of sugar
1 teaspoon of baking powder
Dash of salt
1 egg
1 tablespoon of milk
1 teaspoon of vanilla
2 cups of flour

1. Preheat oven to 375F.

2. Beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, baking powder, and salt. Beat until combined, scraping bowl. Beat in egg, milk and vanilla. Beat in as much of the flour as you can with the mixer. Stir in remaining flour. Divide dough in half. Cover and chill dough for 30 minutes or until easy to handle.

3. On a lightly floured surface, roll half at a time to 1/8 inch thickness. Using a 2-1/2 inch cookie or biscuit cutter, cut into desired shapes. Place on ungreased cookie sheet. Bake in a 375F oven 7 to 8 minutes or until edges are firm and bottoms are very lightly browned. Cool on a rack. If desired, frost with powdered sugar icing.

Powdered Sugar Icing
Adapted from Better Homes & Gardens
Makes 1/2 cup


1 cup of sifted powdered sugar
1/4 teaspoon of vanilla
1 tablespoon of milk

1. In a small bowl, combine powdered sugar, vanilla and milk. Stir in additional milk, 1 teaspoon at a time, until glaze is easy to drizzle. Tint as desired with food coloring.
