How many of you remember the care package I received of 125 pounds of plantains, bananas and mini-bananas? Do you remember all the recipes I made with my green and yellow treasures.
I am heading out to visit those very friends for the holidays! The town we are visiting was one that was drastically affected by the civil terrorism and drug-trafficking that happened years ago. Even the police stayed out of this particular block because they were so well self-protected. Now, it is one of the almost-forgotten areas of town. The people that live there have been hardened by the years of problems.
What a joy to be “taking Christmas” to these families. We are taking a lot of panettones and all the fixings for hot chocolate as well as gifts for many of them. What a joy it will be to see!
Although we are supposed to be in summer here in Lima, this week it has drizzled, been foggy, cold and overall just feels like it is still winter! Going out to the jungle will allow us to spend a green (instead of white) Christmas in both the sun and the rain. I cannot wait!

1 green plantain
2 1/2 cups of water
1 cinnamon stick
2 whole cloves
1 cup of evaporated milk
1/4 cup of sugarAfter peeling, grate the plantain. Bring water to a boil with the cinnamon and cloves. Add the grated plantain; bring mixture to a boil, then lower hear to simmer for 25-30 minutes or until the plantain is softened and water is partially absorbed; stirring occasionally. Add evaporated milk and sugar, stirring to blend and allow it to cook for about 3 more minutes. Serves 2.
Because I wil be in the jungle, my internet access will be limited. I shall meet with you again after Christmas. (Or maybe before, if those Daring Bakers have something in store…) Have a very Merry Christmas celebrating with friends and family!!!
