Coconut Milk...Take 2

One thing I love about making curries is coconut milk. Why? Because it becomes my excuse to make these during the following days...


I ran across this recipe a few years ago and after using a half a can of coconut milk, I needed a purpose for the rest. I made these Coconut Cranberry Muffins and the rest is history. Not a curry goes by without these delicious muffins the next morning. Since I made Thai Chicken last week, I knew that these muffins would soon grace my counter.

Now, they not only grace my counter, but now you too can share in my cranberry & coconut joy!

Coconut Cranberry Muffins

2 cups of flour
2/3 cup of sugar
2 teaspoons of baking powder
1/4 teaspoon of salt
1 cup of dried cranberries
2/3 cup of light coconut milk
1/4 cup of melted butter
1 teaspoon of lime zest
1/2 teaspoon of vanilla
1 large egg
2 teaspoons of sugar

Preheat oven to 400F. In a large bowl, combine flour, sugar, baking powder, and salt; stir with a whisk. Stir in the cranberries. Make a well in the center. In a small bowl, combine coconut milk, butter, zest, vanilla and egg; stir with a whisk. Add coconut mixture to flour mixture, stirring just until moist. Spoon batter into a standard size muffin tin, coated with cooking spray. Sprinkle evenly with remaining 2 teaspoons of sugar. Bake at 400F for 20 minutes. Remove from tin immediately and cool on a wire rack. Makes 12. From Cooking Light.


Quequecitos con Coco y Arándanos Rojos

2 tazas de harina sin preparar
2/3 taza de azúcar rubia
2 cucharitas de polvo de hornear
1/4 cucharita de sal
1 taza de Arándanos Rojos secos (Craisins)
2/3 taza de leche de coco
1/4 taza de mantequilla derretida
1 cucharita de cáscara de limón rayada
1/2 cucharita de vanilla
1 huevo
2 cucharitas de azúcar rubia

Precalentar el horno a 200C. En un tazón grande, combine la harina, el azúcar, polvo de hornear, y sal; batiendo. Agregue los arándanos, mezclando todo. Haz un hueco en el centro. En un tazón chico, combine le leche de coco, mantequilla, cáscara de limón, vanilla y huevo; batiendo. Agregue la mezcla de coco a la mezcla de harina, moviendo hasta que todo este húmedo. Divide la masa en una fuente de quequecitos estándar, ya engrasados. Divide el azúcar que queda (2 cucharitas) entre todos. Hornea a 200C Por 20 minutos. Remueve de su fuente inmediatamente y déjalos enfriar en una parrilla de metal. 12 porciones.
