Feliz Cumpleaños!!!

Enjoy your special Spiced Sweet Potato Cupcakes!

Spiced Sweet Potato Cupcakes

1/4 cup of butter, softened
1/4 cup of shortening
1 teaspoon of vanilla
1 1/2 cups of sugar
2 eggs
2 cups of flour
1 1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
2 teaspoons of Autumn Spice Mix
1 cup of plain yogurt or buttermilk
1/2 cup sweet potato puree

Preheat oven to 350F. In a large bowl, cream together butter & shortening. Add vanilla and sugar, mixing to combine. add eggs one at a time, beating after each addition. Combine flour, baking powder, baking soda and Autumn Spice Mix in a small mixing bowl. Add half of the flour mixture to butter mixture. stir to combine. Add plain yogurt and sweet potato, mix to combine; then add rest of the flour mixture. Fill cupcake paper holders halfway, bake at 350F for about 20 minutes or until muffin springs back gently to the touch. Remove from oven and cool 5 minutes in muffin tin before transferring to a wire rack to cool completely. Frost with Orange Cream Cheese frosting and sprinkle with Autumn Spice Mix. Makes 24 cupcakes.

Orange Cream Cheese Frosting

Cream together 1/4 cup of butter, 4 ounces of softened cream cheese, and 1 tablespoon of orange juice. Gradually add in 3 cups of sifted powdered sugar. Mix until frosting reaches a spreadable stage.

Autumn Spice Mixture

2 tablespoons of ground cinnamon
1 tablespoon of nutmeg
1 tablespoon of ground ginger
1 tablespoon of ground orange peel powder
2 teaspoons of ground cardamom
1/2 teaspoon of ground cloves

Combine all ingredients and use as needed in place of pumpkin pie spice or in other recipes needing a touch of Autumn Spice! Store in a tightly sealed container in a cool dry place.
