2 teaspoons of butter
1/3 cup of chopped pecans
2 Tablespoons of dark brown sugar
2 cups of flour
3/4 cup of rubia sugar
2 teaspoons of baking powder
1 teaspoon of ground cinnamon
3/4 teaspoon of salt
1/4 teaspoon of ground nutmeg
1 1/2 cups of mashed sweet potato
2/3 cup of orange juice
3 Tablespoons of vegetable oil
1 large egg
cooking spray
Preheat oven to 350F. In a small bowl mix butter, pecans and brown sugar. In a large bowl combine flour, rubia sugar, baking powder, ground cinnamon, salt, and ground nutmeg. Stir dry ingredients with a whisk. Add sweet potato, orange juice, vegetable oil and egg. Stir well until completely blended. Spoon batter into a loaf pan coated with cooking spray. Drop pecan mixture by spoonfuls over the top of the loaf; gently press into batter. Bake at 350F for 1 hour or until an inserted toothpick comes out clean. Cool in pan 5 minutes on a wire rack. Remove from pan; cool completely on wire rack. Makes 12 slices.
